3 sweet potatoes
2 tsp. lime zest
~1 Tbl. Kosher Salt
pinch of cayenne pepper
Canola oil
Place sweet potatoes in a pot and bring to a boil. Cook the potatoes until they are fork-tender. I recommend taking cooking until just before fork tender, making sure not to overcook because that will make them tougher to work with.
Once they are cooked, take them out and let them cool a little. Slice them lengthwise. For best results, I recommend slicing them on the thicker side to make them easier to work with.
After slicing, use a brush to coat the potatoes in canola oil. Meanwhile, in a bowl, combine a little less than a tablespoon of Kosher salt, a dash of cayenne pepper, and about 2 tsp. of lime zest. Toss the potatoes in the seasonings.
Grill potatoes over medium heat on a grill or in a grill pan.
When finished cooking, top with chopped cilantro, serve, and enjoy!
