The night before Christmas Eve my sister and I decided to make a Gingerbread House. So late at night we went to the store to get our supplies and worked all night on our gingerbread house. We themed it around a Dog House since we surprised my Mom’s with a new puppy!

The same night we made the gingerbread house, my Dad received an awesome Christmas gift in the mail. The box read, “Fresh Seafood”. My Mom thought it was shrimp or something until the box started moving. As it turns out there were 4 or 5 good sized Live LOBSTERS in the box!
Guess who had to kill these poor babies?? ME!! I had never killed a live lobster (or any live thing) for that matter! I was scared out of my mind and my Mom didn’t make it any better as she screeched as I plopped them into the boiling water. It was fun even though I did feel bad. What was even better was when we got down to eat those delicious lobsters!
Now, as the title promised, I have an amazing recipe to share with you. I saw Matt make this the week of his marathon and I’ve been wanting to make it ever since!
Baked Penne Pasta
Unfortunately, my camera was dieing so I did not get the best pictures. These pictures do not do this meal justice at all. I LOVED this dish…you must make it!
- 1 pound dried penne rigate pasta
- 1 cup part-skim ricotta cheese
- 1/2 teaspoon dried basil
- 1 (25-ounce) jar marinara pasta sauce (I made my homemade tomato sauce)
- Salt and pepper to taste
- 3/4 cup shredded mozzarella cheese (I used part-skim)
- 1 pound ground turkey breast
- 1/2 an onion, diced
- Olive oil
- 2 garlic cloves
Heat the olive oil in a large skillet over medium-high heat. Satue the garlic, onion, and ground turkey until almost cooked through. It will finish cooking in the oven.
Preheat oven to 350°F. Cook penne according to directions on package, then drain and set aside to let cool for 5 minutes. Meanwhile, combine ground turkey mixture, ricotta cheese, basil, 1 1/2 cups of the pasta sauce, and salt and pepper in a large bowl.
Transfer pasta to bowl with cheese mixture and toss gently to coat. Spread 1/2 cup of the remaining pasta sauce over the bottom of a 7-x11-inch baking dish. Spoon pasta mixture into dish and spread out evenly. Drizzle remaining sauce over the top, sprinkle with mozarella and bake until golden brown and hot throughout, about 30 minutes.
I’m telling you, this is delicious!! You need to try this recipe out…I just could not get enough of it!
