Roasted Chicken with Balsamic Vinaigrette with Farro

This meal comes from Giada DeLaurentiis on Everyday Italian. I have been wanting to make this recipe for some time now, so I was excited to be actually trying it out!  I made Roasted Chicken with Balsamic Vinaigrette.  I served this over Farro (an ancient Italian grain) and made Roasted Carrots on the side.




This meal was so simple and so delicious.  The chicken had a great taste to it.  Giada uses pieces of a whole chicken in this recipe, but I just bought chicken breasts since it was only my sister and I.  Also, we are not fans of dark meat.  It came out great and I would definitely make this again!

This was my first time experimenting with Farro.  I have had a package of it in my cabinet since last summer and I FINALLY pulled it out.  I’m glad I did because I will be pulling it out more frequently.  The farro had a great taste…very nutty & chewy.  You have to try it!
